May 30, 2021 - Sunday - The other day when I made the cornbread I made a big pot of beans too. Today I made some refried beans and sausage tacos with cheddar. It wasn't breakfast though. This was actually dinner. I had a little bit of orange juice left over from yesterday too.

May 29, 2021 - Saturday - This morning I made a frittata for the first time in a very long time. Think I may have used a little too much bell pepper, but having mimosas to go with it made up for it being less than ideal. It was also missing the Ziziki seasoning but that's another story.

May 28, 2021 - Friday - This is the forth or fifth time I've made cornbread and this time it turned out perfect. I made it with buttermilk for the second time and that seems to be the trick. It didn't even stick to the bottom of the backing dish. Unfortunately Riley isn't here to try this. It turned out so good.

May 27, 2021 - Thursday - I've never seen My Girl, but I've heard how sad it was on lots of occasions. I finally watched it tonight. I'm glad I watched this early enough to watch something else before I went to bed. On a brighter note, what a cute kid this little girl is and it was funny to see Macaulay Culkin so little again.

May 26, 2021 - Wednesday - I was out picking up after the dogs this morning and found these on the sidewalk. There's a little nest just above on the gutter's downspout. This makes up for the robin I found a while back that couldn't fly and passed away before I could take it to the sanctuary.

May 25, 2021 - Tuesday - I get videos on my feed from time to time of rescue dogs that make big turn arounds. Makes me happy I came across Zak when I did. He'd been in the shelter for several months and wasn't doing well. He was so skinny, anxious and food aggressive. He's come a long way, but I sure do wish I could have had him as a puppy.

May 24, 2021 - Monday - Riley actually requested I make some guacamole last week when I was ordering groceries. I had an extra tomato and more than enough cilantro. This was my snack while I was "cooking". I remember I was around her age when I finally started liking guac myself.

May 23, 2021 - Sunday - Made a little bit of avocado toast for lunch today. It was really overcast and dark inside so I put my plate on my laptop keyboard for a bit of better light. My feet were hurting quite a bit from being on them so much yesterday so it was nice to be able to relax on the couch most of the day. Watched Godfather Part III tonight.

May 22, 2021 - Saturday - Today we had another photo shoot for Sparkle All Over Bakery. This lady never ceases to amaze me with her inventiveness and skill. I tried seven new flavors today and WOW, just WOW! Her Cookie of the Month has quite an amazing line up scheduled for the rest of the year. Can't wait to order some of these!

May 21, 2021 - Friday - I was a bit hesitant to order this again. It is one of my favorite meals and the naan is amazing, but last time it was very disappointing. Tonight restored my faith in Roti Grill. It was as delicious as always. I even saved a little naan for Zak and the girls.

May 20, 2021 - Thursday - I met some friends for dinner tonight. I haven't seen a couple of them for almost two years. They reminded me that the restaurant we were at was the same as the one in Sachse but with a different name. They have the same brisket enchiladas with the delicious poblano sauce. One of my favorites!

May 19, 2021 - Wednesday - I had a pretty busy day today with work doing quite a bit of video editing. After I watched The Hunt for Red October. I didn't think to take a photo until very late in the evening. Pancake was being lazy next to me on the couch. She was my subject tonight. She looks pooped.

May 18, 2021 - Tuesday - Riley went to Yosemite recently. She has some amazing photos and video. She picked this up for me on her trip. This is the handle of the top of a walking staff. The temptation to bonk her on the head with it was almost more than I could bear. See what I did there?

May 17, 2021 - Monday - I tried to share my cake with everyone at our work event but everyone was focused on drinking and socializing. Fortunately Riley and her BF like this one and ate most of it. I had a slice for a late evening snack tonight while watching The Nanny. Red Velvet with chocolate chips is my favorite Nothing Bundt Cake.

May 16, 2021 - Sunday - Today I went over to my friend's house to hang out with him and his family. I stopped for guac supplies and bought the biggest avocados I've ever seen. This little one got sick later in the evening and put an end to my visit. Poor little thing she definitely wasn't feeling well.

May 15, 2021 - Saturday - From my couch I can see this tree in front of our house. I see squirrels running around it all the time and I see lots of these red headed woodpeckers. This is the first time one of them has stayed still long enough for me to change lenses and get a few photos before they've flown off. It's a bit grainy because of the glass and the screen.

May 14, 2021 - Friday - I don't know what to say about today! We had a work event for the first time in forever. They took the time to make a big deal about some of the work I've done recently and gave me a cake with this as a topper and a big bottle of Jack. My good friend used his daughter to trick me into taking this photo. I work with some really great people.

May 13, 2021 - Thursday - Today while I was on a call for work Riley made us some tacos for a late lunch. She said she couldn't find any radishes at the store and she doesn't like onions. The avocado crema she made was delicious too. These reminded me of the tacos we had at the beach at the Hotel Mayakoba in Mexico.

May 12, 2021 - Wednesday - I've finally reached the end of the 80s movies I've been watching. I posted a request for suggestions for 90's movies and my list is quite long. I think they started making more movies per year in the 80s. I saved one of my favorites for last, Dead Poet's Society. Carpe Diem!

May 11, 2021 - Tuesday - I got out after work to visit a friend. She has a very full rose bush in her back yard. We had lots of bad weather today and I felt bad leaving Zak home but at least he had Riley and the girls for company. He has taken to hiding in my closet when we have bad weather. Thunderstorms are the worst for him.

May 10, 2021 - Monday - Sparkle All Over's Cookie of the Month last month was the Dark Chocolate Cherry Walnut. Of all my favorites this might be the top of the delicious heap. I ordered a box the last day they were available and this is my last one. Who knows if they'll ever be back on the menu. Sadness accrues.

May 9, 2021 - Sunday - Today I was excited to be home waiting for Riley to get home and to hear about her trip to Yosemite. She's been gone for a long while. This afternoon this little guy came and rested on porch and stayed there long enough for me to change lens and get his photo. Zak even stayed quite while I was taking this.

May 8, 2021 - Saturday - I woke up today aching all over pretty significantly. I didn't sleep much or well and spent most of the day on the couch like this. The dogs all kept me company and at the end of the evening I realized I hadn't taken a photo today. I took this of Pancake just before going to bed.

May 7, 2021 - Friday - This evening I meet a group of friends, most of which are former coworkers from way back in the day. We were there to surprise and celebrate a good friend's birthday. I think we may have the numbers reversed on her cupcakes. It was great to see the look on her face and to spend the evening with a lot of friends I haven't seen in forever.

May 6, 2021 - Thursday - My second miss of the year. I don't know what I did today except work but I guess I didn't even watch a movie.

May 5, 2021 - Wednesday - Today we laid to rest the biggest Cowboy fan I know and a girl who was like another niece to me. After the service while having lunch with my nephew's little 5 year old girl, she told us, "When you die, the fairies (Angels) come down and collect your soul and take it back to heaven." She's having a hard time missing her Aunt.

May 4, 2021 - Tuesday - When I went to bed I had the cream blanket (best blanket ever) then the sheet on the left and then the blanket on right all layered on top of each other, nice and cozy, This is the foot of the bed this morning. The sheet barely hanging on the bed at all and the top blanket all gathered up at the top. How does this happen???

May 3, 2021 - Monday - My little tomato plant already has a few little tomatoes on it. I hope this is the beginning of a much more productive year with lots more Caprese Salads.

May 2, 2021 - Sunday - Today I spent the morning finishing up some work. This little guy came up to get a better view of my yard from the top of my porch light. I spent the afternoon with my oldest sister and some of her family. It was good to see them after such a long time.

May 1, 2021 - Saturday - I spent a lot of time on the couch today doing some work. Biscuit spent a lot of time sleeping on one of the back pillows of the couch. I was sitting back and looked over and saw her wake up with this look on her face. Her face is a little crooked and goofy.
